Lorem Ipsum is the standard block of dummy text used to fill a layout before the real copy exists. It is not nonsense invented for the purpose: it is a passage from Cicero's De Finibus Bonorum et Malorum, written in 45 BC, that an unknown printer cut up and scrambled in the 1500s to make a type specimen sheet -- which is why the opening words "Lorem ipsum dolor sit amet" are a fragment of "dolorem ipsum" with the first syllables missing. The scrambling is the point. Dummy text has to be unreadable enough that a person looking at a page judges the setting rather than the sentences, and near-Latin achieves that for an English-speaking reader while keeping a natural-looking distribution of word and sentence lengths. Filling a mockup with real copy instead is a known way to derail a design review: people read it, and then they discuss the writing.

The words are real Latin words, taken from the traditional Lorem Ipsum vocabulary, but the text is not real Latin and does not mean anything. That is deliberate and has been since the 1500s -- the original passage was scrambled precisely so that nobody would read it.
Yes -- switch the flavour to English. It is worth doing when you are testing something English-specific: word lengths, hyphenation, or how a screen reader or a search box handles the text. Latin is the better default for a visual comp, because a reader's eye slides off it.
