The uncomfortable part is how narrow it has become: a large share of the world's dairy is now one breed, most commercial pigs trace to three, and almost every broiler chicken on Earth comes from a handful of breeding lines. That is why rare breed survival trusts exist. A livestock industry built on three genotypes has nowhere to go when one of them meets a disease it cannot handle, and the old breeds are the only reservoir of anything different.

Yes, and on purpose. The Suffolk Punch, the Turopolje pig, the Golden Guernsey goat and the San Clemente Island goat are all critically rare. Several of the breeds here have been rebuilt from a few dozen animals, which is a good part of what makes them worth knowing about.
