Citrus peel is the clearest case: expressing it over the surface sprays aromatic oils that the drinker smells before tasting, which changes the perceived flavour, since most of taste is smell. Others adjust the drink itself -- an olive brine adds salt, a mint sprig releases oil when it brushes the nose, a salt rim shifts every sip. Convention pairs garnish to drink closely enough that bartenders read one from the other, which is why a lime wedge signals a different family of drinks than a lemon twist.
