What is a mixer?

A mixer is the non-alcoholic component of a mixed drink -- soda, juice, tonic, syrup -- and it does more than dilute. It balances the three axes bartenders work in: sweetness, acidity and bitterness, which is why a sour drink needs citrus and a sweetener rather than either alone. Carbonated mixers add texture and carry aroma upward, and quinine in tonic water contributes the bitterness that made it pair with gin in the first place. Temperature and dilution are part of the recipe, so the ice is a mixer too, and a drink built with weak ice tastes flat well before it looks watery.
